What to do when the bananas go brown

Banana bread has been a favourite of mine since childhood, and as a person who hates waste, an essential recipe to have at my disposal when the bananas in the fruit bowl start looking rather unappetising. After years of searching and testing many banana bread recipes I finally came up with one that makes the perfect loaf. There is something about being able to perfect such an iconic dish that is akin to “coming of age”!
You can make 12 medium-sized muffins with it or a small to medium loaf.

Ingredients:
125g butter
1 cup sugar
2 eggs
2 – 3 ripe bananas
1t vanilla
2t cinnamon
2 cups flour
1t bicarb
1t baking powder


Method:
Cream the butter, sugar and eggs together, mix in the mashed banana add the vanilla and all the dry ingredients. Mix well. Bake in a preheated oven of 180 deg C for about 20 min for muffins or about 45 min for a loaf.
