While Claire is out soaking up the sun, sea and sand (I'm so jealous!), I tried to bring the ocean to me with a very interesting fish I haven't tried in fillets before - angelfish. Not quite sure how to cook the fillets I bought, I stuck with good old faithful - frying in butter with herbs in my fabulous AMC pan (no other pan I've tried browns fish to the golden perfection that this one does!)

Angelfish tastes very much like snoek, with a similar texture. It is soft, with a delicate flavour, and I just loved it! (If you come across angelfish pate, I'd definitely recommend trying it - tastes great, and sounds very exotic if you're entertaining friends!)
